RECIPE

HEALTHY BANANA OAT MUFFINS
Yield: 7 Big Muffin

🍌🧁 INGREDIENTS
350 g Bananas (ripe to overripe with brown spots)
70 g Dates (pitted)
160 g Rolled Oats (blend into powder)
115 g Eggs (room temp.)
1 tsp Baking Soda
30 g Dark Chocolate 70% (chopped)
30 g Pecans (chopped)

🍌🧁 INSTRUCTIONS

  1. Preheat the oven before you start 160°C fan/ 180°C/ Gas Mark 4
Once the batter is ready, bake it right away; letting it sit too long can cause the batter to lose its rise and collapse
  2. Blend the Oats into a fine powder (don’t skip this step, you want a smooth, lump-free batter), set aside
  3. In a large blender bowl, add the Eggs first, then the Bananas, Dates, and Oat Powder (make sure to follow this order; otherwise, the blender could get stuck!)
Blend everything until it’s nice and smooth
  4. Sift the Baking Soda into the batter to break up any lumps and ensure it’s evenly distributed; Mix well
  5. Add half of the chopped Pecans and Dark Chocolate to the batter, then mix until everything is well combined
  6. Scoop batter into muffin liners
  7. Sprinkle the remaining Pecans and Dark Chocolate on top
  8. Bake them in a preheated 160°C fan oven for about 25 minutes or until a toothpick inserted into the center comes out clean
  9. Once the Muffins are done, you can serve them warm immediately, or carefully transfer them to a cooling rack and allow them to cool completely before storing

Storing instructions

Because these muffins contain fruit and no preservatives, proper storage is important:

  • Room Temperature: Store in an airtight container; Best consumed within 2 days; Keep in a cool, dry place
  • Refrigerator: Store in an airtight container; Lasts up to 5 days; Texture becomes slightly firmer when chilled
  • Freezer: Wrap individually or store in freezer-safe container; Freeze for up to 3 months; Thaw overnight in the fridge or microwave for 20–30 seconds

Reheating Tips

  • Microwave for 15–30 seconds to soften
  • Or warm in oven at 150°C for 5–8 minutes
  • Enjoy slightly warm for the best texture and melted chocolate pockets

Crispy Thin Whole Wheat Biscuits

If you love snacking but want to keep things light, wholesome, and irresistibly crunchy; crispy thin Whole Wheat Biscuits might just become your new favorite treat.

Packed with the nutty flavor of whole grains and baked to delicate, golden perfection, these biscuits strike the ultimate balance between health and taste 🤩
🤤 Whole wheat retains the bran and germ of the grain, making these biscuits naturally high in fiber, which supports digestion and keeps you feeling satisfied longer
Compared to many commercial cookies, these crispy thin whole wheat biscuits are light on sugars and fats
Perfect for those watching their calorie intake without giving up flavor 😘
You will need Whole Wheat Flour and Oat Bran for this recipe
My go-to brand is Bob’s Red Mill 😚

If you haven’t seen Oat Bran before, it’s the outer layer of the oat grain
Adding oat bran to biscuits is an easy way to boost fiber, texture, and nutrition without changing the flavor too much. It gives your baked goods a slightly nuttier, hearty crunch that’s really tasty.

Whether you pair them with tea, enjoy them as a mid-day munch, or use them as a base for creative toppings.

These biscuits deliver a rich, nutty flavor and a hearty crunch; they’re so easy to bake 😉
I’ve been making these for a while now, and I haven’t bought store-bought biscuits since 😇

Crispy, golden, and baked with love 💞

Perfect anytime, especially with coffee or milk 🤓😋
A little healthy, a whole lot yummy! 😍😁
Hope these biscuits bring a little comfort and joy to your day 🥳

Give them a try and let me know how yours turn out! 😉

Tips for Success (Please Read First):

  • Make sure the Butter and Eggs are at room temperature before you start.
This helps the dough come together smoothly and makes your biscuits light and tender
  • Prepare the pan in advance, line a baking tray with Parchment Paper
  • Keep two additional pieces of parchment paper ready (you’ll use these to roll out the dough)
Using parchment paper helps you to roll thinner, avoid sticking and transfer easily
  • If you can get 3 mm perfection strips, I highly recommend using it (those strips are very helpful for rolling evenly)
  • Don’t be tempted to add flour to the dough or sprinkle too much flour on the work surface, as this will make the biscuits tough
  • Try not to roll the biscuits too thick, or it will take longer to bake and won’t be as crispy
  • Don’t forget to lightly prick each biscuit with a fork before baking; this allows steam to escape and helps them bake evenly, staying flat and crisp
  • Bake in a preheated oven until they turn light golden brown (don’t bake it for too long or it will burn and taste bitter)
Rotate the pan halfway through baking so the colour of the biscuits bakes evenly
  • Once they’re fully cooled, pop them into an airtight container to keep them nice and crisp
  • Never store warm biscuits, as they can become mushy and may develop mold

RECIPE

CRISPY THIN WHOLE WHEAT BISCUITS
Yield: 21 Pieces (6 cm diameter)

🪴 Ingredients
65 g Unsalted Butter
25 g Caster Sugar
1 tbs Honey
25 g Eggs
60 g All-Purpose Flour
60 g Whole Wheat Flour (100% Stone Ground)
Less than 1/2 tsp Baking Powder (Double Acting)
A pinch Salt
8 g Oat Bran
* Extra Oat Bran (for sprinkle)

🪴 Instructions

  1. Cream the Unsalted Butter and Caster Sugar for about 3 minutes, or until the mixture is pale, light, and fluffy
  2. Add the Honey and mix thoroughly
  3. Add the Eggs and beat again until fully combined (this creamed mixture should be soft and smooth)
  4. Add the sifted dry ingredients (All -Purpose Flour, Whole Wheat Flour, Baking Powder, Salt, Oat Bran)
Don’t throw away the Bran left in the sifter, return it to the bowl and mix in gently
    Mix until just combined
  5. Once the mixture comes together into a rough dough, use your hands to knead it lightly until it’s uniform (be gentle, over-kneading can make the biscuits tough)
  6. Roll the dough
Place the dough between two sheets of Parchment Paper and roll it out to about 3 mm thickness (use perfection strips if available); Sprinkle a little extra Oat Bran while rolling the dough
Add a little flour (NOT too much) to the surface of the parchment paper, cutter or rolling pin as needed to prevent sticking (If you don’t have perfection strips, try not to roll it too thick, or the biscuits will take longer to bake and won’t be as crispy)
  7. Then using a 6 cm fluted or plain cutter, cut the dough into rounds
  8. Use the bottom parchment sheet to help lift the cut dough; this keeps the pieces from stretching or breaking; place them into prepared baking trays
If you have any dough scraps, collect them, press them gently into a ball, and reroll to cut again
  9. Lightly prick each biscuit with a fork 6 tiny holes before baking (this allows steam to escape and helps them bake evenly, staying flat and crisp)
  10. Bake in a preheated oven at 180°C/ 160°C fan) / Gas Mark 4 for 13-15 minutes, until they turn light golden brown
Rotate the pan halfway through baking so the colour of the biscuits bakes evenly
  11. Once done, let the biscuits rest in the pan for a few minutes, then transfer them to a wire rack to cool completely
  12. When they’re fully cooled, place the biscuits in an airtight container to keep them nice and crisp

NOTES

  • Never store warm biscuits, as they can become mushy and may develop mold
  • These Biscuits stay fresh for up to 2 weeks at room temperature or around 3 weeks in the fridge
  • They can also be frozen for 2–3 months

Baked Korean Twisted Donut (꽈배기) Kkwabaegi

In Korea, Kkwabaegi is a popular after-school snack 🥰
“Kkwabaegi 꽈배기” or Korean Twisted Donuts;
I absolutely love them, but I don't like frying them; they're too greasy and troublesome.
This recipe doesn't require frying, you just bake them instead! A healthier version of Donuts 😋
Mashed potatoes help keep the dough soft and moist, which is especially helpful in baked Donuts that can otherwise turn out dry. They give the Donuts a tender, slightly chewy, and fluffy texture; The starch in the Potatoes binds with the flour, creating a softer crumb
The key to making beautiful kkwabaegi is “Don’t roll the dough thinner in the middle and thicker at the ends, or vice versa” AND “Don’t twist it too much”
That will cause the twist to break during the proofing or baking process
Your twisted donut won’t look pretty ☹️
These mildly sweet, fluffy, spongy, twisted doughnuts are simply irresistible 😳🤤🤤

Crispy sugar on the outside, soft and slightly chewy on the inside;
And most importantly, it’s not greasy 😜

They pair really well with Coffee, Milk, Chai Tea or even Hot Chocolate.
Make this for your loved ones, or your kids; They’ll love it !! 🤗
I hope you will enjoy it as much as I do 😍

RECIPE

BAKED KOREAN TWISTED DONUTS
Yield: 10 pieces

INGREDIENTS
🍩 Donut Dough
315 g All-Purpose Flour
50 g Caster Sugar

1⅔ tsp Instant Yeast
1/3 tsp Salt
125 g Mashed Potatoes

50 g Egg Yolks
100 g Full Cream Milk (cold)
40 g Unsalted Butter

🍩 Coating

60 g Unsalted Butter (melted)

100 g Caster Sugar

1 tbs Cinnamon Powder

INSTRUCTIONS

  1. Cook Potaoes until tender. Place potatoes in a saucepan, add enough water to submerge. Cook over hight heat until the water comes to a boil. Reduce the heat and let simmer until the Potatoes are tender. Once it’s done, drain the Potatoes and mash them smoothly, set aside.
  2. Preheat the Oven to 400 F/ 200°C/ 180°C fan/ gas mark 6 and line baking tray with parchment paper.
  3. Combine the dry ingredients. In a large bowl, place the Flour, Sugar, and Instant Yeast. Add the salt to the opposite side of the bowl (be careful not to let the Yeast and Salt come into direct contact, as this can kill or slow the yeast’s growth). Stir until thoroughly combined.
  4. Add the wet ingredients to the dry mixture. Add the cooled Mashed Potatoes, Egg Yolks and Cold Milk to the dry mixture. Use a wooden spoon mix well until it forms a lump. And then, using your hands start kneading the dough. Gather all the small crumbs and dry flour to form a ball of dough.
  5. Knead the dough until smooth and elastic. Once the dough forms a rough ball, add the Butter and knead for about 5 minutes until the dough is smooth and elastic.
The dough will be slightly sticky, resist the urge to add more Flour as it can make your Donuts tough.
  6. Portions the dough. Divide the dough into 10 equal portions (about 68 grams each). Shape each portion into a ball. Cover the dough with plastic wrap while shaping to prevent it from drying out. And let the dough rest for 10 minutes.
  7. Shape the dough. 10 minutes later, Take one portion of the dough, roll it out. Starting from the center, roll out to both sides, until it is about 28 cm long.
The dough should be evenly thick from end to end.
I recommend using a ruler as a guide. Don’t sprinkle too much Flour on the surface, as it will be difficult to shape.
  8. Twist the dough (Please watch the video for clear instructions)
Roll the 28 cm long dough with your both hands in different directions; right hand up and left hand down; DON’T twist it too much. Once you feel tension between the two ends, stop twisting. Then, pick up both ends, they will automatically twist. Using your hands twist it a little more. Pinch the ends and fold them under. Place it on a baking sheet lined with Parchment Paper
and cover with plastic wrap to prevent drying.
Don’t roll the dough thinner in the middle and thicker at the ends, or vice versa; That will cause the twist to break during the proofing or baking process. Your twisted donut won’t look pretty.
  9. Final proof. After shaping, let the dough proof for 20 minutes
Meanwhile, we can prepare the Donuts coating
  10. Prepare Coating. Melt the Butter in a double boiler, set aside.
In a Ziploc bag, mix Caster Sugar and Cinnamon Powder, shake it.
  11. Bake the Donuts. After 20 minutes, you can see that the dough puffy and bigger in size. If you press it lightly, the fingerprint returns slowly and does not bounce immediately. Bake in a preheated oven for 12 minutes.
After 12 minutes, flip the donuts and bake for another 3 minutes.
  12. Apply Coating. Once baked, brush with melted Butter while still hot.
Place in a bag of Cinnamon Sugar (shake it), then place the donuts on a cooling rack or a plate.
Twisted Donuts are best enjoyed while still warm, on the day it’s made.

    NOTES
    * If you make a large batch and can not finished it in one day, after baked, don’t apply the coating. Place Donuts in an airtight container in the fridge (it will last for 3 days). When you need it, take them to room temperature for about 30 minutes; then reheat donuts in the preheated (400 F/ 200°C/ 180°C fan/ gas mark 6) for about 10 Minutes (the Donuts will be soft and fluffy again); Then coat with melted Butter and Cinnamon Sugar and serve.
    * Like all raised donuts, they can get a little bready as they age. It’s best to have them warm when they are first made, but if you have to store them, ensure they are completely cooled before packing them into a container.

Frying Pan Milk Bread

Baking bread is my favorite,
the kneading process is very calming and meditative for me.
But as my work gets busier, I find I don’t have time to make homemade bread.

Through trial and error, this Frying Pan Bread was born!
This recipe minimizes time and effort and can be made in just one frying pan.

A super quick and delicious way to make soft homemade bread.

When making this bread; It is important to use a non-stick pan with a thick base, otherwise the dough will stick to the bottom of the pan.

You can use either gas stove or an Induction cooktop to cook the bread
If you are using an induction, please use a special frying pan

The pan lid is also essential; It use to prevent the bread from drying out during fermentation and cooking.

This powder proteins increase the strength of the dough, especially when mixed with Bread Flour

I use Full Cream Powdered Milk, not Liquid Milk in this recipe.
The fat from Milk Powder adds rich flavor and tenderizes the dough, resulting in a softer, finer, more tender crumb.
The bread will also have a longer shelf life.

🙄….. 🤤 SO SOFT…

The bread is so soft and fluffy; perfect served with Butter or jam, or as a delicious accompaniment to a bowl of warm soup.

I love making it into sandwiches 😁

I hope this recipe helps those of you who are busy; The simplest and most delicious homemade bread.

Make it for your loved ones; Give them freshly baked, healthy bread 🥰
LOVE YOU ALL!!

TIPS FOR SUCCESS (PLEASE READ FIRST):

  • Use a heavy bottom non-stick pan, otherwise the dough will stick to the bottom of the pan
  • The pan lid is also essential; It use to prevent the bread from drying out during fermentation and cooking
  • You can use either gas stove or an Induction cooktop to cook the bread (if you are using an Induction, please use a special frying pan)
  • The optimal size for the dough volume is 20 cm in diameter and 5 to 7 cm in depth (make sure your pan is large enough to accommodate the dough; I am using 10-Inch Frying Pan)
  • Choose “STRONG” Bread Flour for best result
  • Use Full Cream Powdered Milk instead of Liquid Milk
  • The water should be lukewarm; roughly matching body temperature, which is about 35°C to 37°C (this is the ideal range for activating yeast effectively)
AVOID water that is too HOT, as this can kill the yeast
  • Follow the steps carefully, don’t skip any proofing time
  • While cooking bread DON’T use HIGH heat
Please note: Stove temperatures vary, the correct temperature is determined by trial and error (you may need to experiment until you find the right temperature for your stove)
If the temperature is too high, the surface of the bread will burn; Conversely, if it’s too low, the interior of the bread will be undercooked
  • Don’t forget to cover the pan when cooking
Covering the pan and cooking slowly over medium-low heat, the water content in the dough will be locked in, resulting in soft, moist bread
  • Once done, place the bread on a cooling rack to cool completely before storing (by allowing excess moisture to escape and the structure to set, cooling helps the bread stay fresh longer)

Rich Fluffy Moist Classic Marble Cake

Marble Cake is my classic childhood baking memory 🥰
Swirls of tender Vanilla and rich Chocolate Cake baked together in one beautiful Tube Pan.
This cake was a childhood favorite, but it seems a bit dated now; which is a shame, because it’s worth the energy it takes to bake.

😱

Many Marble Cake recipes will simply use a basic Pound Cake recipe, and introduce a couple of tablespoons of Cocoa Powder to half of the batter.
A pound cake recipe is an extremely useful one to have up your sleeve; but for me, it isn’t the perfect Marble Cake recipe.

I love making this marble cake using my old tube pan 😙

So this recipe is based on a Vanilla Sour Cream Cake that I’ve been making for years: as well as the tang of the Sour Cream softening the sugar content,
Adding Sour Cream will result in a richer, super moist and soft cake.

The cake is ridiculously moist and keeps extremely well (Unglazed Marble Cake should last 4 days at room temperature in an airtight container, without becoming dry or stale).
Likewise, the mixture of Cocoa Powder and melted Butter in the darker batter creates richness and depth of flavor; no dry or bland cake here.

I used the Flour Batter Mixing Method to make this cake.
This method produces a more tender cake because the Butter coats some of the gluten-forming proteins in the flour at the beginning of the mixing process, preventing excessive gluten formation.

Flour Batter Method works only if the Butter is softened or 65° to 75°F/ 19° to 23°C.
At this temperature, the Butter when whipped will hold the maximum amount of air; And make sure that all other ingredients are room temperature as well, this includes Eggs and Sour Cream.

I love to serve this cake with Chocolate Glaze, but you can serve it just plain or dust the top with Icing Sugar.

Once the glaze is poured, I highly recommend storing it in the refrigerator, since the glaze contains Butter as a perishable ingredient.

🤤 I want to bite it !

The cake smells amazing 🤪 🙃 😘 …
There is something special about a classic marble cake, it catches the eye but also makes you excited to bite into it because it has two different flavors.

You can use a Bundt Pan to make this simple homemade treat much more sophisticated.

It is wonderfully rich and buttery with a moist and tender crumb.

If you love soft, velvet Marble Cake then please give this cake a try.
I will also show you how to get the perfect Marble swirl (kindly watch the video)
This beautiful moist cake perfect for serving with a cup of tea or coffee.

Marble cake is a simple concept, but the baked result is very satisfying, with a delightful look when you cut into the cake and reveal the hidden pattern.
I hope you will enjoy it as much as I do 😃

TIPS FOR SUCCESS (PLEASE READ FIRST):

  • Choose the right pan
Use a cake pan made of a highly conductive metal such as Aluminium
If you prefer to use a Bundt Pan, make sure that you choose a thick, non-stick metal pan that is not too dark, since they are sturdy and conduct heat consistently
  • Make sure every crack and crevice of your pan has been greased with solid Shortening and flour to ensure a perfect crust
  • Preheat the oven 20 minutes or longer before you start (use an oven thermometer to ensure the temperature is correct)
Set an oven rack in the lower third of the oven
  • Start with room temperature ingredients (the Butter must be softened or 65° to 75°F/ 19° to 23°C).
I usually take the ingredients out of the fridge (including Eggs and Sour Cream), allow to sit on the counter for about 30 minutes before I start making the cake. The amount of time depends on the weather and how cool you keep your kitchen (the temperature where I live is 29.5°C)
DON’T heat the butter in the Microwave, melted Butter won’t cream properly
  • Always use real Butter (100 percent High Quality Butter)
  • Sift the Flour Mixture (160 grams of Flour, Baking Powder and Salt)
  • When adding Flour mixture and Sour Cream, DON’T overmix
  • When making the marbling effect, DO NOT overdo it (2 rounds max) as you want the Vanilla and Chocolate swirls to be clearly visible
  • NEVER try to speed up the baking process and DO NOT open the oven door until your cake has baked at least three-quarters of the recommended baking time
  • Once it’s baked, let Marble Cake rest for at least 15 minutes in the pan; then remove the pan and let it cool completely on a cooling rack
  • Marble cake is best eaten the day after baking
Once cool, store Marble Cake at room temperature (in an airtight plastic bag) overnight
And the next day; you can pour the glaze on top and serve.

RECIPE

MARBLE CAKE
Yield: One 10-Inch (7 cm tall) TUBE PAN

❄️ Ingredients
CAKE BATTER
🪴Cocoa Mixture:
40 g Unsalted Butter (melted)
20 g Cocoa Powder (Dutch-Processed)

🪴 Creamed Butter Mixture:
255 g Unsalted Butter ~ softened at room temperature
180 g All-Purpose Flour

🪴Flour Mixture:
160 g All-Purpose Flour
2 ¼ tsp Baking Powder (Double Acting)
3/4 tsp Salt

240 g Sour Cream (room temp.)
1/2 tbs Vanilla Extract
225 Whole Eggs (room temp.)
90 g Egg Yolks (room temp.)
375 g Caster Sugar

CHOCOLATE GLAZE
170 g Dark Chocolate Compound (Semi-Sweet)
120 g Heavy Cream
20 g Unsalted Butter
1 tbs Dark Rum

❄️ Instructions
Preparation

  1. Coat the entire inside of the pan with solid Shortening
After greasing the pan, sprinkle some All-Purpose Flour, tilt the pan and rotate it (tapping the sides to spread the flour evenly)
Invert the pan and tap it lightly to get rid of any excess flour (make sure every nook and cranny of the pan is greased and floured to ensure a perfect crust)
  2. Preheat the oven 20 minutes or longer before you start 160°C fan/ 180°C/ Gas Mark 4 (use an oven thermometer to ensure the temperature is correct)
Set an oven rack in the lower third of the oven
  3. Make sure all utensils clean and grease free (wipe the bowl and utensil with lemon juice or vinegar to helps remove grease).
  4. Make sure all ingredients are at room temperature
Take the Butter, Eggs and Sour Cream out of the fridge, allow to sit on the counter for about 30 minutes before you start making the cake (the amount of time depends on the weather and how cool you keep your kitchen. The temperature where I live is 29.5°C)
The Butter must be softened or 65° to 75°F/ 19° to 23°C; To test poke it with your finger; your finger should make an indent without sinking into the Butter (it should not be shiny or greasy and cool to touch, not warm)
DON’T take a shortcut and Microwave the Butter because it will not heat evenly
  5. Melt 40 grams of Unsalted Butter in the double boiler, then mix with Cocoa Powder until smooth; set aside
  6. Using a baloon whisk, combine the Flour Mixture (160 grams of All-Purpose Flour, Baking Powder and Salt), set aside
  7. Mix Sour Cream and Vanilla Extract, set aside

To Make Marble Cake

  1. In the first bowl
Beat the softened 255 grams Unsalted Butter for 30 seconds until soft
Add 180 grams of All-Purpose Flour, mix on LOW SPEED first until the dry ingredients are moistened; then raise the speed to MEDIUM-HIGH and continue beat for about 3 minutes until light, fluffy and pale in color (scrape the sides and bottom of the bowl occasionally to make sure everything is evenly mixed)
This method produces a more tender cake because the Butter coats some of the gluten-forming proteins in the flour at the beginning of the mixing process, preventing excessive gluten formation
    Set aside
  2. In a second bowl
Beat the Eggs and Caster Sugar at MEDIUM-HIGH speed for about 3 Minutes to form a semi-firm foam
The egg whipping is not as thorough as that needed for a Sponge Cake
  3. Using a hand whisk, gently combine the Beaten Eggs to the Creamed Butter Mixture in 3 batches (mixing well after each addition)
  4. Then gradually add sifted Flour Mixture alternately with Sour Cream that we prepared earlier in 3 batches (beginning and ending with Flour Mixture).
Please note that the flour mixture must be sifted
Mix gently with a hand whisk until just combined after each addition
Make sure that you scrape the entire surface of the bowl so there is no flour residue on the sides and bottom of the bowl (avoid over-mixing the batter or your Marble Cake will be tough)
  5. Using a spatula, scrape down the sides of the bowl, making sure everything is mixed well (the consistency should be thick)
  6. For the Chocolate batter, pour 360 grams of the batter into another bowl
Add the Cocoa mixture that we have prepared earlier and stir until well combined
  7. Scoop the batter into the prepared pan
Place 1/3 of the Vanilla batter first
Then 1/2 of the Chocolate batter
    Repeat the process
    Finished with the Vanilla batter
  8. For marbling effect
Using a wide spoon, fold through bit by bit
Then use a spatula, lightly swirling the batter in a spiral motion (make sure the spatula doesn’t touch the bottom of the pan)
Don’t overdo it here, 2 rounds max, as you want the Vanilla and Chocolate swirls to be clearly visible (this process will also help to flatten the batter and break the large bubbles)
  9. Tap the pan to remove excess bubbles
  10. Bake in the preheated 160°C fan/ 180°C/ Gas Mark 4 (the lower third rack) for 1 hour or until a skewer inserted into the center comes out clean
Never try to speed up the baking process and Do not open the oven door until your cake has baked at least three-quarters of the recommended baking time
The rush of cold air that hits the cake when the door is opened could cause the cake to collapse
** If you feel your cake is a little too brown, what you can do is after 45 minutes of baking, cover the pan loosely with Aluminium Foil to prevent overbrowning and continue bake for another 15 minutes until the cake is done
  11. Once it’s baked, let the cake cool in the pan for about 15 minutes
  12. 15 minutes later, remove the pan and let it cool completely on a cooling rack
  13. Marble cake is best eaten the day after baking
Once it’s cools completely, wrap tightly with airtight plastic and let it sit at room temperature overnight. This storage method can maximize the moisture of the Marble Cake

To Make Chocolate Glaze

  1. Heat the Heavy Cream in a medium saucepan until start to simmer
  2. Remove from heat, add in the chopped Chocolate, let it sit for 30 seconds then whisk until smooth
  3. Add the Butter while the mixture still hot (Butter fat adds a creamier, shinier, and more stable Ganache)
  4. Pour in Dark Rum, this is optional and mix until well combined
Now you can see, the consistency of the glaze is runny
Let the glaze cool to lukewarm and thickened for about 20 minutes
  5. After 20 Minutes the glaze will be thicken
Drizzle over the cake and sprinkle with some toasted Almonds

NOTES

  1. DON’T use Butter to grease the pan
Shortening is preferable to Butter because it is solid at room temperature; It will stick the pan and provides a better barrier
Butter unless it is clarified will leave gaps where the flour will not adhere but the cake unfailingly will
  2. Ensure the cake is completely cooled before wrapping or storing
If you are wrapping a warm Marble Cake, condensation may occur, which can make the cake soggy and sticky
That moisture buildup can affect the crumb—making it feel overly dense or gummy
Condensation = Mold Risk; If it’s wrapped warm and stored for a while, that trapped moisture can speed up spoilage
  3. The unglazed Marble Cake can simply be stored at room temperature (wrap the cake tightly in plastic wrap or place it in an airtight container); store in a cool, dry place away from direct sunlight, it can last for 3-4 days at room temperature
  4. Once the glaze is poured, I highly recommend storing it in the refrigerator, since the glaze contains Butter as a perishable ingredient
  5. If storing in the refrigerator, wrap the cake well to prevent it from drying out and absorbing odors; Marble Cake can be kept in the refrigerator for up to a week
  6. For longer storage, it can be frozen for up to 3 months
Wrap the cake or individual slices tightly in plastic wrap and then foil; Store in an airtight container or freezer bag
To thaw, remove from the freezer and let it sit at room temperature for a few hours

Choux Pastry 101 (Pâte à Choux)

Choux Pastry or Pate A Choux (French: [pat a ʃu]) is a delicate and the most versatile French Pastry that everybody loves.

The essential ingredients are Butter, Water, Flour and Eggs.

The signature feature is the hollow center that forms when baked. It’s perfect to fill with Pastry Cream, Jam, Curd or even Ice Cream 😘

Instead of a raising agent, this dough is dependent on the steam created from the liquid content and the heat that expands and stretches the dough into beautiful hollow shapes just waiting to be filled or eaten as is!

The high moisture content is achieved by boiling the water and butter, then adding the flour. The mixture is cooked a few minutes longer, then cooled before adding enough eggs to achieve the desired consistency.

The key to Choux Pastry is looking for the right texture to know that enough egg has been added and NOT opening the oven during the baking process.

For pipping, you can use 12 mm round or star nozzle

If the eggs are not enough, the dough will be too thick, difficult to pipe and won’t rise perfectly; on the other hand, if use too many eggs, it will be too runny and become flat when baked.

Eclairs 😻

The number of eggs depends on the egg size, flour absorption and the humidity in your kitchen on any given day.

Dip your fingers in water, pat down any points or help form of your piped shapes into better mounds

DO NOT OPEN the oven door when the dough is baking, especially in the first 30 minutes until they are a deep golden brown or it may collapse as the structure is still unstable

Look how beautiful and puffy this Choux Pastry is !! 😍

In this recipe, I will share with you a few tips to make this multipurpose dough along with filling and decorating options.

Produce large, sturdy pockets with visible shape but still soft inside 🤗

Once you understand the basic technique, you can make everything from irresistible Cream Puffs, Eclairs, Profiteroles or even Paris-Brest.

I LOVE IT Cream Puff shell with a star nozzle, it’s beautiful with the top points
♥️❤️

Let’s Talk about choux PASTRY ingredients

  • FLOUR – All-Purpose or Bread Flour works well for Choux Pastry
Bread Flour produce thicker, sturdier shell and more visible shape; while using All-Purpose Flour produce a softer shell.
After years of experimentation, combining the two flours yielded the best results; the Choux will produce large, sturdy pockets with visible shape but still soft inside.
  • FAT – You can use either Margarine, Unsalted Butter or Salted Butter There is not much different. If you prefer Margarine, make sure you choose a good quality one.
  • LIQUID – You can use just Water or a combination of Milk and Water.
Milk gives a nice aroma and color to the Choux shell.
  • EGGS – Use fresh room temperature eggs for best result
If your eggs are too cold, you will have trouble incorporating them into the dough.
  • SUGAR – Traditionally NO Sugar was added, but it does make the Choux Pastry shell more flavourful and enhances browning.
  • SALT – Salt is use for flavouring, avoid using coarse salt. Omit salt if you use Margarine or Salted Butter.
Eclair with Round Nozzle 😃

Once its baked, you can store in a freezer bags and freeze them.
Then when you need it, re-crisp the Choux directly from frozen, baking in the preheated 170°C fan oven for 2 to 3 minutes or until hot to the touch.

😌 Eclair with Star Nozzle

And the good thing about this dough; You can freeze them before baking.

Pipe them on baking pan (lined with parchment paper) and freeze. They will harden like a rock, store in a freezer bag, put in the freezer.
When you need it, bake from frozen according to the same baking times and temperatures as called for in this recipe.

For the filling, one of my favourite is Cream Patissiere or Pastry Cream. A delicious custard filling which is adaptable and delectable. It’s easy to change the flavor of this custard to make your own creations.

Delicious Vanilla Pastry Cream 🥲 hungry….
Tasty Chocolate Pastry Cream 😍🥰 my favourite …
Various choices of Eclairs

There are endless possibilities !!

🤤
Something I usually do for my dinner parties; take it to the next level !!
I cut the cooled Choux in half, fill it with a small scoop of my favourite ice cream
Pipe some Chantilly Cream on top, put the top back on and store in the freezer until ready to eat.

TIPS FOR SUCcESS for making choux pastry (PLEASE READ FIRST):

  • Use fresh room temperature eggs for best result
If your eggs are too cold, you will have trouble incorporating them into the dough
  • It is important that the butter is at room temperature and cut into small cubes, so the liquid doesn’t boil for a long time while it melts (this can cause too much water to evaporate and can affect the final texture)
  • When you cook the liquid mixture, make sure it reaches full boiling point otherwise it will not come together into a smooth ball (it will look like oatmeal)
  • Avoid adding the eggs before the cooked mixture has cooled or you will end up with scrambled eggs
  • Add eggs one at a time
Fully incorporating each egg before adding the next and check the consistency after you have added 4 eggs
If the eggs are not enough, the dough will be too thick, difficult to pipe and won’t rise perfectly; on the other hand, if use too many eggs, it will be too runny and become flat when baked
  • DO NOT OPEN the oven door when the dough is baking, especially in the first 30 minutes until they are a deep golden brown or it may collapse as the structure is still unstable
  • Once it’s baked, remove from the oven and let it cool completely before filling

RECIPE

Yield: Makes about 20 Cream Puffs or 30 Eclairs

INGREDIENTS
❄️ Choux Pastry Dough
180 g Water
180 g Whole Milk
150 g Salted Butter (cubes, room temperature)
1½ tsp Sugar
3/4 tsp Salt (omit if you use Salter Butter or Margarine)
45 g Bread Flour
180 g All-Purpose Flour
4-5 Eggs (large)

❄️ Pastry Cream
85 g Egg Yolk
75 g Sugar
22 g All-Purpose Flour
15 g Corn Starch
90 g Whole Milk
360 g Whole Milk
21 g Unsalted Butter (room temperature)
15 g Sugar
1½ tbs Vanilla Extract or 3/4 tbs Vanilla Paste or 1½ Vanilla Bean

Flavour Combination:
– Chocolate: Add 80 g Dark Chocolate (chopped) in the end of cooking
– Fruit: Let the pastry cream cool completely, then add fruit puree or jam (start with 3 tablespoons)
– Coffee: Add 1½ tablespoon of Instant Expresso Powder to thickening ingredients at the begining

❄️ Chantilly Cream
240 g Heavy Cream
20 g Icing Sugar
1 tsp Vanilla Extract
1 tsp Gelatine Powder
1½ tbs Cold Water
1½ tbs Boiling Water

❄️ Chocolate Sauce
85 g Dark Chocolate (chopped)
120 g Heavy Cream

INSTRUCTIONS
❄️ Choux Pastry Dough

  1. Preheat the oven to 170°C fan/ 190°C/ gas mark 5
  2. Prepare the pan in advance (lined with parchment paper) and weigh all the ingredients before starting to make the dough
Pipe a small dots of the batter in the corners to glue the parchment paper to the pan so it doesn’t move around
  3. In a medium saucepan, combine Water along with Milk, Salted Butter and Sugar
Cook over medium heat, stirring as needed until they come to a full boil and the butter is melted (take it off the heat as soon as full boil is reached)
  4. Add both flour all at once and stir with a spatula or wooden spoon until a ball of dough forms
  5. Once you reach this smooth ball, turn the pan back to medium heat and stir continuously for 30 seconds to 1 minute until a slight film covers the bottom of the pan (this dries out the dough a little and also cooks off any flour flavour)
  6. Then transfer the dough to a clean large bowl, spread the dough around the sides of the bowl and let it cool for a few minutes until no longer hot (avoid adding the eggs before the mixture has cooled or you will end up with scrambled eggs)
  7. Once it’s cooled, add 4 eggs first (one at a time); fully incorporating each egg before adding the next
Use a wooden spoon or spatula stir the mixture (I found using a hand mixer and spatula is the best and least tiring way) Kindly use a stand mixer with a paddle attachment for a large batch.
The dough will look separated and then come together as you continue to mix it
  8. Check the consistency after you have added 4 eggs
    To test, scoop up a large amount of dough, turn the spatula to the side and wait for the dough to fall, it should be take about 5 to 10 seconds to drop;
If the dough still seems thick and it doesn’t fall, add just a little beaten egg at a time and test until you reach the right texture
  9. There are 3  important things to look for to know that your Choux Pastry is ready:

FIRST, the dough looks shiny

SECOND, is the V test (when it is the right texture, it will fall in a define point known as a bird’s beak like this)

THIRD, to make sure that our mixture is not too runny is to take your finger and draw a trench, if it holds that’s means it’s ready

9. Once the dough is ready, pipe the dough into the desired shape (kindly watch the video for complete instuctions)
10. Then you can dip your fingers into water, using wet fingers pat down any points or help form your piped shapes into better mounds
11. Once it’s done, bake in the preheated 170°C fan/ 190°C/ gas mark 5 , on the middle rack for 40 minutes
DO NOT OPEN the oven door when the dough is baking, especially in the first 30 minutes until they are a deep golden brown or it may collapse as the structure is still unstable (so if you have small oven, bake only one pan at a time; the remaining dough can be sit in a piping bag until the oven is free)
12. Once it’s baked, remove from the oven and let it cool completely on the cooling rack before filling

❄️ Pastry Cream
(make sure you follow the steps carefully, adding the ingredients in this order will prevent lumps)

  1. For the thickeners
In a medium bowl, beat the Egg Yolks and 75 grams of Sugar vigorously for 30 seconds or until the color of the mixture brightens slightly
  2. Add in the All-Purpose Flour and Cornstarch, stir well until there are no lumps
  3. Then slowly pour 90 grams of Whole Milk and mix again until smooth (milk will loosen up the mixture, making it easier to incorporate with the pastry cream liquids later), set this aside
  4. Then, in a medium saucepan, combine the 360 grams of Milk along with Unsalted Butter, 15 grams of Sugar and your choice of Vanilla Flavoring (the small amount of sugar will keep the milk from scalding)
Cook over medium heat, stir once or twice to help the sugar dissolve
When it comes to a simmer, take it off from the heat; and slowly pour this mixture into the egg yolk mixture while whisking (this is called tempering the eggs, bringing both mixtures to the same temperature so the eggs won’t cook)
  5. Pour the mixture back to the saucepan, increase the heat to medium high and whisk strongly for several minutes
  6. When the mixture start thickens and boils, whisk for an additional 30 seconds
It is very important to whisk while the mixture boils for 30 seconds or your Pastry Cream might not set (sometimes it’s hard to see the boil unless you stop whisking for couple of seconds to look for big plops coming to the surface)
  7. Once you see that the texture is really smooth and thick like a pudding, take it off from the heat (if you don’t see any little bits or lumps, there’s no need to strain out)
Pour into a clean bowl, cover with plastic wrap, touching the surface of the Pastry Cream (this helps it cool faster and prevent skin from forming on top)
  8. Chill until cold about 1 hour
  9. If you want to make the Chocolate version, simply add chopped bittersweet, semisweet or milk chocolate to the hot Pastry Cream right after you finish cooking it and whisk until smooth
  10. Once it’s cooled, you will find the texture is like jelly
Whisk by hand just until it’s smooth, this only takes a minute (DON’T whisk too long, you can loosen the firm structure too much and it might start to get runny)

❄️ Chantilly Cream

  1. Simply mix Heavy Cream along with Icing Sugar and Vanilla Extract over an ice bath
Whip at high speed until the mixture is at medium-firm peak, set aside
  2. Then in a small bowl, bloom the Gelatine in Cold Water, let stand for about 5 minutes
  3. After 5 minutes, add Boiled Water to the Gelatine mixture, stir to dissolve
And pour immediately into the Cream, mix well (Gelatine mixture acts as a stabilizer so that the cream is more stable)

❄️ Chocolate Sauce

  1. Chop the Dark Chocolate into small pieces so it will be easier to melt and combine, then place in a heatproof bowl
  2. In a medium saucepan, heat the Whipped Cream until it starts simmering and pour it all in one go over the chopped Chocolate
  3. Let is sit for a couple minutes for the chocolate to start to melt, then whisk until it come together into a thick, glossy chocolate sauce
If you have a chocolate pieces that haven’t melted, gently warm in a Microwave or place the bowl on top of a saucepan of steaming water to make a double boiler
  4. This Chocolate Sauce can be used as an icing, letting it cool to spreadable consistency on Eclairs or you can also drizzle it over a Cream Puffs as topping or garnish

METHODS TO FILL CHOUX PASTRY
First Method

  1. Using a chopstick or skewer, punch a hole in the bottom of the Cream Puff or 3 holes in the bottom of Eclair
  2. Transfer the filling to a piping bag fitted with a 5 mm round piping tip
  3. Press to fill
  4. When the shell feels heavy and a little bit comes out the hole, it’s full
  5. Wipe off any excess with clean finger
  6. And to finish, you can dust the top with icing sugar just before serving or dip to coat the top with chocolate sauce

Second Method

  1. Cut the Cream Puff or Éclair in half with a serrated knife
  2. Fill the base with delicious filling or if you like berries, that’s also a great choice
  3. Place the bit that was cut off on top as a little hat or enjoy it as a snack
  4. To finish brush or drizzle chocolate sauce on top and sprinkle with some rice chocolate or shavings
  5. If you want Ttake it to the next level
I usually cut the cooled Choux in half, fill the base with a small scoop of my favourite ice cream; Pipe some Chantilly Cream on top
Put the top back on; And store in the freezer until ready to eat
Then when it’s ready to serve, I will poured some warm chocolate sauce on top (yummy!!) 🥰

NOTES

  1. You can freeze the unbaked Choux Pastry Dough before baking
Pipe them on baking pan and freeze, they will harden like a rock
Store the frozen dough in a freezer bag, put in the freezer
When you need it, bake from frozen according to the same baking times and temperatures as called for in this recipe
  2. Once the Choux Pastry shells is baked, store unfilled shells at room temperature for up to a day, or in an airtight container in the freezer for up to a month.
Then when you need it, re-crisp the shell directly from frozen, baking in the preheated 170°C fan oven for 2 to 3 minutes or until hot to the touch
  3. Once the sheells filled with cream, Choux Pastries should be kept in the fridge for up to 5 days (but it taste best eaten within a day or two).
  4. Pastry Cream can be made 3 to 5 days in advance, depending on the expiration date of your milk.

Fluffy Flaky British Scones Baked to Perfection (in 30 Minutes)

WHAT IS THE SECRET OF MAKING GOOD SCONES?
The recipe seems so simple, but the perfect Scone doesn’t come easy.

There are many little gritty things that can get in the way of achieving that all-buttery point of perfection.

Scones are supposed to be light, fluffy and soft interior with a little crisp to the edges and top.

Can you see those layers?? 🧐
A little crisp to the edges and top 🥲🥲

Making Scones requires a VERY light touch.

Only use the tips of your fingers to rub in the butter into the flour, lightly lifting and dropping the mixture.

Scones Dough before baking

The trick is to use light pressure and only work the dough until it just comes together.

One common mistakes that causes Scones to be dry and tough is being too heavy-handed with the dough.

When you overwork the dough, your Scones can come out tough and chewy, rather than that desired light and crumbly texture.

If scones aren’t part of your baking repertoire, I suggest you give them a try.

Look at those flaky texture 🤗

They come together quicker than almost any other baked good and taste absolutely delicious 🤤

Messy and crumbly is a good thing! 🤩

Scones are best served warm, with Clotted Cream and Strawbery Jam of course; And not forgetting a pot of good Earl Grey Tea.

Choose your favourite Strawberry Jam 😍

If you cannot get Clotted Cream, you can try Crème Fraîche or Unsalted Butter; it goes quite well with Strawberry Jam.

And what is the proper way to eat a scone? Jam first or Cream first?
Lots of people are debating this 🤭

The Cornish tradition is to cut the scone in half, so you have two flat rounds;
On each side, Jam is spread first and then the cream on top.
The Jam being spread first is what makes it the ‘Cornish way‘

I personally prefer the Royal Way
I would put Jam on first, with cream on top and then sandwich them together so it’s not overly sweet 😚

😱😱😱 ……can’t wait to eat them!!!

But ultimately, You can do what you want! 🤣😂
The scones will still be tasty 😍

I will eat my Scones like The Queen… 👸🏻 …. shy…. 😌☺️

Take a small bite and enjoy the happiness brought by the Scones … 🥰

Look at those beautiful texture … 🤪

Kindly follow all the tips and instructions in this recipe, I’m sure you’ll end up with tender, flaky Scones that will literally melt in your mouth.

😊 😍 HAPPY BAKING !!!

The Key to Perfect Scones (Please Read First) :

PREPARE A LARGE MIXING BOWL
Prepare a large bowl for making scones. You will need some space for the mixing process; this provides plenty of room to spread the butter and mix the dough easily.

USE COLD BUTTER STRAIGHT FROM THE FRIDGE
Make sure that the butter is extremely cold.
Cold butter promotes the flakiness, high-rise and fluffy scones.
I usually take the butter out of the fridge and cut it into large cubes right before I’m ready to mix the dough.
Don’t cut it too small or even grate it. That will make the butter melt faster and you’ll have trouble with a sticky dough.
If you keep the butter in larger pieces, you get flakiness.
Once it hits the oven, the dough around the butter starts to set, the butter melts, and steam from the water content puffs the layers apart.

COLD BUTTERMILK FOR TENDER SCONES
For the liquid, most recipes calls for Whipped Cream or Milk.
However, when the Scones are served with Clotted Cream or Butter and Jam, I found this combination way too rich and not tasty.
I prefer to use homemade Buttermilk for the Scones which is the key to softness and lightness.
Buttermilk makes the scones very tender, has a better crumb and provides a slightly tangy taste
To make it: simply mix regular cold milk with some lemon juice or white vinegar, then let the mixture sit for 5 minutes to curdle and thicken slightly before using.

SIFTING ALL THE DRY INGREDIENTS
Don’t skip this step, it helps to build a light texture

INCLUDE BAKING SODA TO THE RECIPE
Since we are using Buttermilk, Baking Soda is added to this recipe.
The acid in the Buttermilk reacts with the Baking Soda and produces Carbon Dioxide which helps the Scones rise.

DON’T OVERWORKED THE BUTTER
When you mix the Butter with the Dry Ingredients, don’t pinch or overworked the butter into too tiny pieces or you will end up with Scones that are soft but not flaky.

USE A FORK TO WHEN ADDING THE LIQUID
By using a fork, the liquid (Buttermilk) will evenly distribute without overmixing the dough.

A ROUGH PASTRY-STYLE FOR EXTRA FLAKINESS
For extra flakiness, do a “Rough Puff Pastry-Style” flattening and folding the dough.
Fold three to four times, Building in those layers.
DO NOT kneading or stretching the dough, we don’t want to develop gluten and have a very tough Scones.

SHAPE THE DOUGH INTO A THICK DISC
The thickness of your Scone dough is all important.
Before you cut, Shape the dough into a thick disc about 3-4 cm thick

DO NOT TWIST THE CUTTER
Remember when you cut it, don’t twist the cutter or the Scones will be lopsided (it won’t look pretty 😒)

COLLECT AND PRESS THE SCRAPES
After you cut the dough, you will have those little scraps.
DO NOT knead it!
What you can do is collect and press it together; stand the dough up and press again.
Press until it is 3 cm thick and then you can cut again.

APPLY SOME EGGWASH
To give the top of the Scones a bit of shine, apply some egg wash.
Avoid the sides and bottom because they will affect the rise.
This will give your Scones a nice golden brown finished.

BAKE WITH IDEAL TEMPERATURE AND TIME
Use 15 minutes of a Scones in oven as a good rule, you can’t foget about it! 🤖

  2. Add grated Lemon Zest; mix well.
  3. Add Unsalted Butter in Cubes to the dry ingredients.
    Then, to incorporate the butter:
    – FIRST STEP
Coat the butter with the flour,
Using your fingers pinching and squishing the pieces of butter (broke down the butter into smaller pieces).
Don’t pinch or overworked the butter into too tiny pieces or you will end up with scones that are soft but not flaky.
    – SECOND STEP
Take a handful of the dough with the bits of butter and flatten it between your palms
(this thin sheets of butter that’s once it enters the oven, it melts and releases steam, which leads to that magical texture)
When you feel between your hands all the butter pieces are flattened, you can start adding the liquid
  4. Slowly pour in the Buttermilk.
Stir gently with a fork (by using a fork, the liquid will evenly distribute without overmixing the dough).
  5. Once you see the dough comes together, you can stop mixing it (if there are a few dry crumbs left, that’s okay).
  6. Dust your work surface with some flour (not too much) and transfer the dough over.
  7. Gather and press the dough together into a large ball, gather up any small crumbs (you can flour your hands lightly).
  8. Then using a large scraper; do a rough Puff Pastry-Style flattening and folding the dough.
Fold three to four times, building in those layers (DO NOT kneading or stretching the dough; because we don’t want to develop gluten and have a very tough Scones).
    * If you like to add some dried fruit, nuts or maybe fresh fruit, you can add while you building this layers.
  9. Once it’s done, shape the dough into a thick disc about 3 cm thick
  10. Cut into rounds with a 5 cm diameter floured round cutter (remember when you cut it, don’t twist the cutter or the scones will be lopsided). Place them on a parchment-lined baking tray.
    * Feel free to vary the cutter size a little bit, as long as the thickness is the same, it will bake at the same speed
  11. After you cut the dough, now you have those little scraps. DO NOT knead these scraps.
What you can do is collect and press it together; then stand the dough up and press again
until it is 3 cm thick; And then you can cut again.
    * Do the same with the remaining dough (if there is only a little dough left, just shape it into a round with your hands.
  12. To give the top of the Scones a bit of shine; using small brush apply some Egg Wash.
Avoid the sides and bottom because they will affect the rise (this will give your Scones a nice golden brown finished).
  13. Bake them in the preheated 200°C fan/ 220°C/ gas mark 7 for 15 minutes.
  14. Once it’s done, you can serve them immediately (Scones are best enjoyed when still warm) or let them cool completely on a cooling rack before storing.

Notes

  1. Scones are best enjoyed when fresh while still warm, but with proper storage they can extend their delight beyond the baking day while keeping safe to eat.
  2. Storage Method Room temperature 1-2 days in a covered container away from heat and sunlight
  3. Refrigerator Up to 3 days in an airtight container with a paper towel lining
  4. Freezer Up to 1 months in a freezer bag or tightly wrapped in an airtight container
  5. To preheat: In the preheated 180°C oven for 5-10 minutes or Microwave on high 10-20 seconds; They should be as good as freshly baked 😄.

Mocha Mousse Cake

Not only this cake is so tasty, but it also has two of my favourite things that I need every day; coffee and dark chocolate. This one is for all the chocolate and coffee lovers.

This is definitely not a quick recipe as it has a few different elements However, it is also not highly technical or complicated (this cake requires a little patience 😉).

One important tip when making it, make sure that you bake the Chocolate Sponge Cake in advanced so it has time to cool because Mousse is very susceptible to heat.
Don’t rush the chilling times. If anything is too warm when assembled, it will melt and you won’t get that light and fluffy mousse texture.

Chocolate cake is incomplete without decoration, don’t you agree? 😉

And if you like to decorate the cake, I will show you the simplest way to make an attractive chocolate decorations.

This chocolate decorations is best frozen at 17 to 21 degrees Celsius.
Once it’s done, let it harden at room temperature for best results. It will take longer, but this way the chocolate can maintain its shape and shine.

So pretty!! 🥰

If the room temperature is too warm, the only way is to put it in the fridge, however the chocolate will sweat and lose its shine.

This cake is delicious and creamy … 😍

Chocolate and coffee have always made such a great pair and it is heavenly

🤤

This rich chocolate cake is light, fluffy, and decadent…

The mocha mousse is creamy and airy, brings some softness to this cake.

I hope you can share this beautiful cake with someone you love 😘

70 g Dark Chocolate 60% (chopped)
100 g Coffee Liquid
40 g Milk
200 g Heavy Whipping Cream
1 tsp Finely Ground Coffee

🍫 Decorations
150 g Dark Chocolate Compound
Chocolate Buttercream

INSTRUCTIONS
Cake

  1. Bake the Chocolate Sponge Cake in advance so that it has time to cool as Mousse is very susceptible to heat.
  2. Once the sponge is baked, transfer it to a cooling rack and leave to cool completely.
  3. Wrap the cooled sponge cake in a cling film and Ziplog Bag then let it rest overnight in the fridge.
This will ensure that all the moisture is sealed and the sponge is perfect firm texture for trimming and layering.

NOTES: If you are in a hurry or have to make the cake on same day, let the cake cool for at least 30 minutes before wrapping and place in the fridge to chill.
    Don’t rush the chilling times.
If anything is too warm when assembled, it will melt and you won’t get that light and fluffy mousse texture.

Sugar Syrup & Mocha Mousse

  1. Start by brewing your favourite coffee
1 tablespoon of ground coffee with 155 grams hot water (we will need 155 grams of coffee liquid)
    Let it cool completely.
    * If you want a stronger coffee taste, you can use 2 tablespoons of ground coffee
  2. Finely chop the Dark Chocolate
Place the chopped dark chocolate in a medium sized heatproof bowl (I recommend using 60% dark chocolate for a divine taste or you can use Dark Chocolate Compound)
  3. Once the coffee liquid has cooled, divide it into 3 portions
    – First for the Sugar Syrup
Mix 25 grams Coffee Liquid with Caster Sugar; stir until all the sugar dissolved
Add Dark Rum for extra kick (if you don’t want alcohol in your cake, you can just omit it)
    – Second to bloom the Gelatine
Mix 30 grams of Coffee Liquid with Gelatine, set aside
    – Third
Place the remaining 100 grams of Coffee Liquid with milk in a medium sauce pan
    Cook over medium heat;
    Once it starts to bubble, pour this mixture over the chopped Chocolate;
    Stir until the chocolate has fully melted into the liquid;
    Immediately add the bloomed Gelatine and mix again until everything is dissolved;
Then let it cool completely (please note, this mixture needs to be fully cooled but not stiff
before you fold into the Whipped Cream; It will take for about 30 minutes to 1 hour)
  4. In the meantime, we can prepare the cake layers and moulds to assemble them

    Cake Layers
Cut the chilled Chocolate Sponge Cake into two equal layers, about 1-inch thick (you can use the top of the cake for other purposes)
    Place the ring mould on top of the cake;
Using the outside edge of the ring mould as a guide, trim the sides of the cake (use a sharp knife)
    * This trimming method ensures there are no gaps between the cake and the ring so the mousse doesn’t leak over the sides
Once it’s done, wrap cake layers in a cling wrap to prevent from drying out

Mould for assembly
Cover one side of the ring mould with a cling wrap (the side with the cling wrap is the bottom of
the cake). Place this ring on a sturdy cake board.
Then place a sheet of Reusable Non-Stick Baking Paper on the bottom for easy removal.
* Remember to prepare this first; Don’t let by the time the mousse starts to sets, the ring isn’t
ready yet; That would be a disaster!

5. Once the coffee-chocolate mixture cooled to room temperature, we can start beating the
Whipped Cream. On medium-high speed, whip the cream until stiff peaks form.
* I highly suggest to whip the cream over an ice bath, this will helps stabilized the cream longer;
Especially when the weather is hot and you’re whipping by hand

6. Using a wide rubber spatula, gently fold the cooled coffee-chocolate liquid into the Whipped
Cream in two additions
* Don’t stir the mixture or you will deflate the cream and make a dense filling

7. Add finely ground Coffee, mix well; Then immediately remove the bowl, don’t let the mousse sit
too long and harden in the ice bath; then we are ready to assembly the cake

ASSEMBLY THE CAKE

  1. Place the first cake layer to the lined plate ring mould
  2. Brush with some Coffee Sugar Syrup (this will keep the cake moist and add extra flavour to the cake)
  3. Pour half of the Mocha Cream over the first layer (use the back of the spoon to smooth out and bring it all the way to the edges)
  4. Place the second layer of cake over it (press down on the top layer of cake so that it lies level and firmly on the mousse)
  5. Repeat the same process for remaining syrup and mousse
  6. Once it’s done, place the cake back in the fridge for at least 8 hours or preferably overnight

MAKING CHOCOLATE DECORATIONS
(kindly watch the video for completed instructions)

  1. Place a piece of non-stick baking paper on top of the template, secure them with some tape
Feel free to use any design according to your taste
  2. Place the bowl of chopped dark chocolate over a pan of hot water, make sure that the bowl doesn’t touch the water
  3. Stir the chocolate until it’s completely melted without any lumps (don’t let the water drip on the chocolate, it will cause it to seize, becoming stiff and grainy instead of smooth and silky)
  4. Pour the melted chocolate into a piping bag
Trace the shapes according to the template
When tracing it, make sure the outer frame is thicker so they don’t break when lifted
  5. Chocolate is best frozen at 17 to 21 degrees Celsius
Once it’s done, let it harden at room temperature for best results. It will take longer, but this way the chocolate can maintain its shape and shine
    * If the room temperature is too warm, the only way is to put it in the fridge, however the chocolate will sweat and lose its shine

UMOULD AND FINISHING
(kindly watch the video for completed instructions)

  1. After 8 hours in the fridge, the mousse has hardened
To unmould, place the ring mould on an inverted 6-inch round baking pan
  2. Peel away the cling film
  3. Then using hot towel, wrap around the outside of the ring for a few seconds to loosen it
    Gently push the ring down
  4. Then carefully transfer the cake to a display plate
  5. Beautify with some buttercream and chocolate decorations

NOTES

  1. Always store the cake in the fridge
  2. This cake can be made a day or two in advance, but I recommend eating it within 4 or 5 days

Traditional Chinese Dumpling 饺子 (Gyoza) from Scratch

“We’ve eaten a lot of dumplings in restaurant but somehow, we always come back to these recipe“

These are little pockets of light, joy and deliciousness; My little nephew can literally devour them by the plateful. 🥲😄 Maybe… this is the dumpling recipe that you need.“

The original Chinese dumplings are called Jiaozi (饺子) (also known as Gyoza in Japanese Language).

These dumplings consist of ground meat and vegetable filling that are wrapped into a thinly rolled piece of dough, which is then sealed by pressing the edges together.

I remember sitting in my Mom’s kitchen, learning to fold these.
My fingers clumsily stumbling over everything, getting the wrappers way too wet, putting in too much filling 🤣
And after a couple times trial and error, I manage to learn it and never imagined that I could sold them quite well  😂

Chinese dumplings (Jiaozi) may be divided into various types depending on how they are cooked.

  • Boiled or Water dumplings called 水饺 (shuǐjiǎo)
  • Steamed dumplings called 蒸饺 (zhēngjiǎo)

  • Pan-fried or Pan-Stick dumplings called 煎饺 (jiānjiǎo) or 锅贴 (guōtiē); also referred to as “Pot-Stickers”
  • Deep-fried dumplings called 炸饺 (zhà jiǎo)
  • Soup dumplings called 汤饺 (tāngjiǎo)

So what is the japanese version like?

The method of cooking Gyoza actually almost similar to Pan-Fried Method.
The difference is that Gyoza has a “golden skirt” surrounding the fried dumplings, gluing all the dumplings together.

Gyoza with “skirt”

They are first fried in a hot pan until crispy brown on the bottom sides, then starch mixture is added before the pan is covered to quickly steam the entire dumplings.

The skirt of Gyoza itself is made with flour or starch mixed with water

This technique gives Gyoza the best mix of textures, where you get crispy bottoms and tender soft tops that encase the juicy filling inside

This recipe produce 65-70 pieces.
I will guide you step by step on how to make it and also show you 3 methods for cooking the dumplings; Pan Fried, Boiled and Gyoza style.
Different method will produce slightly different texture but all of them are appetizing.

Dumplings are so handy to have, I really encourage you to make a big batch if time permits.
I hope this recipe provides all the information you need for a successful outcome (CLICK this link and follow instructions in the video for more details)
🥟 Love you All

Let’s Talk about Dumpling Fillings

  • Pork –While the original Chinese dumplings use ground beef, pork, lamb, chicken, fish, and shrimp for fillings; classic Gyoza usually consists of ground pork.
I prefer mixing pork and shrimp to develop and add a deeper umami flavour to the overall filling.
  • Cabbage –Chinese dumpling use Napa cabbage, but regular cabbage is commonly used for Gyoza.
As cabbage leaves are thick and hard, we use different ways to make the cabbage leaves wilted. I’m prefer to sprinkle salt to dehydrate the cabbage and squeeze the water out before mixing with meat.
  • Chinese Chives –Some people adds Chinese chives to their dumpling, but I usually skip the chives as my family don’t like its strong taste.
Instead, I add more green onions to the filling.
  • Aromatics –Garlic is commonly used in dumpling.
My mom always adds grated ginger and Coriander leaves too, so I do the same for my recipe.
  • Seasonings – The seasonings are simple, with just Fish Sauce, Light Soy Sauce, Sugar and a pinch of Salt and Pepper.
This way you can just enjoy the flavour and freshness of the main ingredients.
  • Binder – A bit of Sago or Tapioca Starch will make the insides of your dumplings super tender. It’s the secret to juicy, tender dumplings!
When you mix the water & starch and mix everything, it will come together into a homogenous paste, that’s what you want!
  • Vegetable and Sesame Oil – A little secret that can not only lock in the moisture of the vegetable fillings, but also enhance the aroma of the dumpling fillings.

Be Creative –  There is plenty of room for creativity when comes to making dumpling. Feel free to experiment with different ingredients or seasonal vegetables.
For example, you can add some shiitake mushrooms to the filling. I like the meaty texture and juicy umami flavour from shiitake mushrooms.

How to Make the Skin Dough

All-Purpose or Plain Flour works very well for dumpling skin or wrapper.
It’s possible to use bread flour, but you might find the cooked wrappers a little too chewy.
You can also use a special dumpling bleached flour for a whiter results.
I personally don’t prefer to use it for a healthy reason.
You can make dumpling dough either by hand or in a stand mixer with a dough hook.

Simply combine 500 g All-Purpose Flour and 260 g Water
Once you don’t see any leftover dry flour you can stop mixing it (Don’t worry if the dough looks rough at this point)
Cover with a cling wrap and let it rest for 20 Minutes
(By letting the dough rest, gluten bonds will begin forming, the dough will start to smooth out and soften)
After 20 Minutes the dough become softer.
Knead it again for about 1-2 min until it’s form a smooth medium-firm dough
Then cover and leave to rest for a further 60 minutes (max. 2 hours) before shaping

How to Prepare the Filling

Cut 1 kg cabbage half lengthwise, rinse it under running water to remove any excess debris or dirt
Chop the cabbages lengthwise (1 cm wide);
Turn it over, and then chop as finely as possible (about 1 x 1 cm)
Place the chopped cabbages in a big bowl, scatter them with 2 tablespoons of salt; massage the salt through (the purpose of adding the salt is to draw the excess moisture out)
Once the salt is incorporated, let it sit for about 20-30 minutes
After 20 minutes, you can see a lot of liquid coming out of the cabbage
Use a muslin clothes of strainer, squeeze all the liquid ( I like to use muslin cloth because I can squeeze it all at once in large quantities)
Squeeze out all the liquid as much as you can (it’s a bit tiring, be patient 😚)
Set that aside…
Clean the 125 g Prawn (remove the head and the outer shell, legs and the tail). Using a kitchen scissor cut along the back of the prawn, discard the dark vein that runs under the surface.
For the Prawn Paste, blend 125 g Prawns, 1½ tbs Coriander Leaves, 1/2 tsp Ginger, 1½ tbs Green Onion, 1 tbs Garlic, 1 tbs Sesame Oil, 1/2 tbs Fish Sauce, 1/2 tbs Light Soy Sauce and 1/2 tbs Vegetable Oil in a food processor
Now, let’s combine all the filling ingredients
Mix 250 g Minced Pork (with fat), Blended Prawn Paste, 1/2 tbs Sago or Tapioca Starch, 1/2 tbs Salt, 2 tbs Sugar and 1/2 tsp White Pepper Powder
Mix it really well
Add in the Squeezed Cabbage, mix again until fully incorporated with the meat mixture
Your filling is ready! 😉

Roll and Shape the Dumpling Skin

Cut about 1/3 of the dough (make sure that you keep the rest wrapped up so it doesn’t dry out).
Roll the dough into a 2 cm diameter ropes; and then cut it into small equal pieces (about 1 cm wide). There’s no need to be perfect or exactly even.
Flatten each piece into a round disc with the palm of your hand (this basic shape will make it easier when you roll it).
And then roll them into thin wrappers with a rolling pin; I use a roll & turn technique which produces wrappers that are thinner on the edge but slightly thicker in the middles (perfect for dumpling folding). If the dough sticks to the work surface or the rolling pin, dust with a little flour.

Dumpling Folding Techniques

If you planned to eat them fresh, just place the finished dumplings on a floured surface to keep them from sticking

But if you like to freeze the uncooked dumplings, place them on a container or baking sheet lined with Parchment Paper and a bit of flour (make sure non of the dumplings touch each other)
Wrap the container or baking sheet tightly, allow to freeze overnight
On the next day, they will be hard as rock.
Transfer them to Ziplog Bag and throw them back into freezer for use later (consume within 3 months)

Cooking Method

A thick heavy bottom NON-STICK pan with a lid is a perfect way to fry the dumplings.
This kind of pan is important to ensure the even distribution of the heat so that every dumpling can be cooked to a similar golden colour.
You can use regular pan, but you run the risk of the dumplings sticking to the bottom of the pan; you don’t want to ruin your hard work 😒

And for the Gyoza, whatever the size of your pan, make sure you’ve got a plate that fits on top of it;
Because you are going to turn out a Gyoza at the end, so if your plate is not the right size, you can end up with a bit of mess.
And make sure you use a deep pan and enough water to boil the dumplings 😉

No matter how you wish to cook them, frozen dumpling don’t need to be defrosted beforehand
Let’s start cooking!

PAN FRIED (Guo Tie) 锅贴

Heat the NON-STICK pan over MEDIUM HIGH heat, add about 2 tbs of Vegetable Oil
Place dumplings in a circular formation (make sure each bottom of the dumplings is in touch with the oil) leave a little bit of space between each one
Allow them to fry for a couple minutes
Check the bottom part of the dumplings
Once it turned light brown, pour in the Water (make sure it cover one half part of the dumplings)
Cover it with the lid and steam over HIGH heat for about 10 minutes
After 10 minutes, you can see that the water has reduce quite a lot (shake the pan to make sure there’s nothing sticking to the pan)
After 10 minutes open the lid, lower the heat to MEDIUM LOW and continue cook until the water is fully evaporated
Check the bottom part of the dumplings, when they are golden brown and crips, its done!
The filling is tender and juicy while the bottom are crispy 🥰

GYOZA 餃子

Prepare “Starch Mixture” in advance for the Gyoza “skirt”
Mix 300 g Water with 2 tbs Potato Strach (can be substitute it with Corn Starch/ Plain Flour/ Rice Flour)
Once it turned light brown, pour in the Starch Mixture (don’t forget to stir the mixture before you pour it, to make sure that the starch is evenly distribute)
You don’t need to use all the starch mixture, just make sure it cover one half part of the dumplings (if you use bigger pan, you might need more starch mixture; kindly double the recipe as needed)
Cover it with the lid and steam over HIGH heat for about 10 minutes
After 10 minutes open the lid, lower the heat to MEDIUM LOW and continue cook until the water is fully evaporated
Watch carefully, when the skirts start to dry, drip some Sesame Oil around the dumplings (these Sesame Oil is going to help the skirt brown, make it crispier and also adds a beautiful flavour)
Cook for a further minutes, pay attention to the gaps around the Gyoza, so you can judge how brown you want it to be
Once it’s done, give a little shake, make sure there’s nothing sticking; place a plate on top and carefuly flip the Gyoza
Enjoy the beautiful crispy skirt 😘
There’s a satisfaction in making a crisp sound when breaking the dumplings apart! 🤪

BOILED (Shui Jiao) 水饺

We will use the Chinese Traditional Method called Dian Shui (点水) to boil the dumplings

Over HIGH HEAT, bring a pot of water to a full boil and gently slide in the dumplings
Stir them gently, make sure there’s no dumplings stick at the bottom of the pan
Cover the lid
Once the water come back to a full boil, add 1 cup of Water, close the lid again and let it back to a full boil again.
Repeat the process of a boil and add water 2 more times
When they are fully cooked, the dumplings should be plump and floating on the surface
Drain it and you can serve it immediately
Although not very popular in restaurant, boiled dumpling is my favourite since childhood; as I love the soft yet slightly chewy texture and its non-greasy taste.
Don’t let them wait too long, boiled dumplings BEST SERVE when it still hot 🤩

Dipping Sauce

No dumpling is complete without a delicious dipping sauce ☺️
For my family, dipping sauce is very important for dumplings, especially if you like spicy; you might interest to try my “MOM’s Special Homemade Sauce”

To make it, simply mix all the ingredients
120 g Hot Garlic Chili Sauce, 30 g Water, 1 tbs Sugar, 1 tsp Sesame Oil, 1 tbs Light Soy Sauce, 1 tsp Chinese Black Vinegar and 1 tbs Garlic (minced)

Notes

  • To Freeze the Uncooked Dumplings
If you’d like to freeze the uncooked dumplings, wrap the container tightly ,allow to freeze overnight (freeze them in a single layer, don’t stack).
And then on the next day, transfer them to Ziploc bags and throw them back into the freezer for use later. Freeze up to 2 months for best flavour and texture (consume within 3 months).
  • To Store the Left-Over Cooked Dumplings and Reheating
In the refrigerator, cooked dumplings will last about 3-5 days. Always put them in an airtight container to prevent the dumplings from drying out.
  • To reheat the left-over cooked dumplings
Pan-Fried and Gyozain the preheated 180°C oven for about 10-15 minutes
Boiled recook in the hot boiling water for about 5 minutes.

Korean Traditional Rainbow Rice Cake MUJIGAE-TTEOK 무지개떡

Mujigae-tteok (Korean: 무지개떡) or Rainbow Rice Cake is a layered tteok (rice cake) of different colours resembling a rainbow.
It is used for special occasions such as a banquet, party, or feast like doljanchi (baby’s first birthday), hwangapjanchi (60th birthday).

Alternative names for Mujigae-tteok include Saektteok (색떡) and Saekpyeon (색편), both of which means “coloured rice cakes”

The main ingredient for making this cake is “wet milled Short Grain Rice Flour” Mepssalgaru (Korean: 멥쌀가루) which in many places is very difficult to find.

Wet milled Short Grain Rice Flour (Mepssalgaru)

In this recipe, I will show you how to mimic the texture of this rainbow cake by combining 3 kinds of basic flour (so you will be able to enjoy this beautiful rice cake wherever you are).

I use Mugwort Powder (dark green), Red Yeast Powder (pink), Butterfly Pea Powder (purple) and Spinach Powder (light green)

For the colouring, natural food colouring powder is commonly use for making this cake. The price is far more expensive compared to artificial food colouring powder but of course it is safer.

For steaming, it is important to line the steamer with a damp cotton cloth along with this reusable silicone sheet 😚
This sheet will prevent your rice cake from sticking to the bottom

I highly recommend to use bamboo steamer for best result, it absorbs condensation and prevent the cakes from getting soggy (if you are using metal or plastic steamer, make sure that you cover the lid with a piece of cloth so the water condensation doesn’t drip onto your cake).

Place the ring moulds on top (feel free to use any shape of mould according to your taste)
Coloured rice flour are then laid on a cloth-lined steamer, layer by layer

Using a scraper, spread each layer of the mixture evenly.
Please remember scrape the mixture lightly, DO NOT press or tamp the mixture (it will make the cake dense and not fluffy).

DO NOT PRESS the mixture 😉

After 8 minutes of steaming time; don’t forget carefully remove the ring mould so that the sides can cook well.

Please pay attention, you may need to add some water halfway through the steaming process (don’t let your steamer burn) 😣

🤗 These delicate and subtly sweet rice cake not only beautiful and colourful, it is also tender with a light chewy consistency, it’s not very sweet.

The perfect birthday cake for those who don’t have a sweet tooth.

🤤 I’m already DROOLING

Look at the colour 🥰 How pretty it is!
You can create your own colours according to your preferences !!

The colours makes me happy 🤣

This cake is one of my favourite…. I really can finish it by myself 😳🤫 I hope you will give it a try and I’m sure you will like it! 😀

RAINBOW RICE CAKE (MUJIGAE-TTEOK) 무지개떡
Yield: One 10 cm Heart Mould (3.5 cm tall) & One 16 cm Round Mould (7.5 cm tall)

INGREDIENTS
🌿 Basic Mixture
2/3 tsp Salt
275 g Water
220 g Rice Flour
220 g Glutinous Rice Flour
110 g Potato Starch
195 g Caster Sugar
Natural Food Colouring Powder (Mugwort, Red Yeast, Butterfly Pea, Spinach)

🌿 Filling
10 g Brown/ Palm Sugar
1 tsp Cinnamon Powder

INSTRUCTIONS
Basic Mixture

  1. Prepare the steamer
Line bamboo steamer with a damp cotton cloth along reusable silicone sheet.
Place the ring moulds on top (feel free to use any shape of mould according to your taste).
Notes: If you are using metal or plastic steamer; make sure that you cover the lid with a piece of cloth so the water condensation doesn’t drip onto your cake.
  2. Mix 2/3 tsp Salt with 275 g Water until the salt completely dissolved, set aside.
    * This step is important, otherwise you will taste grains of salt in your cake, which is NOT GOOD.
  3. Then, in a large bowl combine 220 g Rice Flour with 220 g Glutinous Rice Flour and 110 g Potato Starch, mix well.
  4. Add salted water that we made earlier to the flour mixture; mix roughly (you will see now that the dough has a lot of lumps).
  5. Using your hands, press out any wet lumps by rubbing it gently between your palms for uniform mixing (by doing this, the moisture will be distributed evenly).
  6. Then using the coarse mesh strainer sift the mixture (I don’t recommend using fine mesh because it will complicate the sifting process).
  7. Every flours have different water needs, weather is another factor.
After sifting this mixture once, you can test whether the water content in the dough is sufficient.
Take a handful of dough and squeeze it; If it doesn’t break right away when you throw it, that’s means it’s good to go.
    * On the other hand if it breaks, that’s means you need to add more water (add 1 teaspoon at a time until the dough clumps up well).
And then, you can sift the mixture again at least 2 times.
  8. Once it’s done, pour in 195 g Caster Sugar, mix it really well and this basic white mixture is ready.
  9. For the heart shape mould 10 cm (3.5 cm tall)
Fill half of the mould with the basic white mixture.
Using spatula, spread the mixture evenly
Scrape the mixture lightly (DO NOT PRESS or TAMP the mixture, it will make the cake dense and not fluffy).
Add some Cinnamon Brown Sugar filling in the center (10 g Brown/ Palm Sugar, 1 tsp Cinnamon Powder), then fill the rest with the mixture up to the top of the mould; Using a scraper level it.
Place a small heart mould on top for the decorations; fill with a little bit of pink mixture and spread evenly.
  10. For the big round mould 16 cm Round Mould (7.5 cm tall)
Divide the remaining basic mixture into 4 equal portions.
For the first layer; add Mugwort Powder to the first batch, mix it really well
Put this dark green mixture into the ring mould and spread it evenly (remember do not press the mixture, scrape it lightly).
    * Continue with another layers; and in the meantime you can start preheat the water for steamer (it is better to fill the water a little over half; if you fill it up too much, the bottom of the rice cake will become stiff).
  11. After all the colours is done; slide each ring (heart and round) up and down, left and right to give clearance so that the mould can be easily removed later.
For more details please follow video instructions
  12. When the water boils, place the steamer
    STEAMING METHOD & TIME
(Please pay attention, you may need to add some water halfway through the steaming process; Don’t let your steamer burn)
    – First: Over HIGH HEAT for 8-10 Minutes; then carefully remove the ring moulds.
    – Second: After remove the ring moulds, back to the pot and continue steaming over HIGH HEAT for 25 Minutes.
    – Third: After 25 Minutes, turn OFF the heat and let it sit in the hot pot for another 5 Minutes.
  13. After 5 minutes the rice cake is ready, carefully lift and flip the cake onto the plate. Place the pretty love shape rice cake on top and serve.
    * You can wrap this cake in a plastic packaging or an airtight cake box so it doesn’t dry out

NOTES

  1. It taste best on the day they are made (they cannot be kept for long).
  2. Freeze any leftover rice cake
If you are unable to finish the cake, you can cut it into slices (wrap them individually with an airtight plastic wrap) and store the rice cakes in the freezer for 1-2 days.
  3. To reheat
By placing them in a steamer (over HIGH HEAT) for 5-10 minutes.
    * I don’t recommend to use microwave to reheat it because the texture of the cake will tend to become dry.
