Sumikko Gurashi Deco Mousse Cake

I’m obsessed with Sumikko Gurashi, I even sleep with them every day 😂 and I was thinking that they would be very interesting if I draw them on a Sponge Cake 🤔.

So here it comes ” Sumikko Gurashi Deco Mousse Cake“
I love this cake so much 😍, I think they are really cute and so tasty.
Sponge cake painted with cute Sumikko and filled with delicious and cloud-like Strawberry Mousse.
It is super light, moist and really fluffy.

Some of my Sumikko collection 😬 and there are many more… 😳 SHY…

Some people might think that they won’t be able to make this kind of cake, because they are not really good in painting.

As you can see (in my video), this cake is actually not difficult to make.
You just need to print and trace according to the template, it’s a really fun activity!
So don’t be discouraged, if I can do it, you can do it too! 🥳

In this recipe, I will show you in details how it’s done!
Here with some tips and tricks you can bake it as a gift and I’m sure everyone will love it so much Because it was so SPECIAL 😆

1. Pan – Templates – Baking Paper
It is important to prepare the pan and templates first (as your drawing guide) before you start making the cake.

Kindly find the ready print A4 templates below

This “Reusable Non-Stick Baking Paper” is perfect for deco rolls.
You can use Parchment Paper if you want.
I found that if you apply too much drawing paste on Parchment Paper, it will wrinkle easily.

Reusable Non-Stick Baking Paper

Compared to parchment paper, this makes tracing from the template easy and it peels off the cake smoothly to yield neat and pretty results, even for the finest patterns.
So.. if you keen to buy this kind of baking paper, I totally recommend it.

Make sure that you secure the paper with some double tape, so they stop slipping around

2. Tie the Colour Bags Tightly
Another important thing is the drawing paste.
You should be able to control the colour, so make sure you tie each of the piping bags tightly so you feel comfortable holding it, they will be your drawing pen.

3. Let the Drawing Paste Set
And since our Sumikko is quite complex, it’s a good ideas to break down the process into several steps.
The goal is to let it harden so it doesn’t bleed to the next colour.

STEP 1 ~ Outline and Small Details

Start by drawing the outline and any small details that can interfere with the color next to it
Don’t worry if you make some mistake, you can always fix it, you can use small dry brush to fix or even remove the paste.

Kitchen paper is your best friend. Sometimes you will find that your piping bag is clogged and you need to clean the tip, that’s what your best friend for 😬

After finished with all the outlines, pop them in the fridge to harden or until it doesn’t stick to your finger when you touch it.

STEP 2 ~ The Rest Details (Except the Grass)

Next, you can continue with the rest of the details, except the grass; just leave it for the last step.
Make sure that you apply the color thick enough, because if it’s too thin it will peel off easily.

STEP 3 ~ The Grass

And lastly, add some pale green color to the grass.
Sometime you will see some air bubbles on the paste, you can use toothpick to release it.

Once it’s done, it is important to let our cutie Sumikko chill for at least 30 minutes in the fridge to set before you pour the cake batter on top.
Remember… you don’t want to ruin your hard work.

Toothpick to prick a naughty bubbles 😤

4. Don’t Pour the Cake Batter ALL at Once
You don’t want the stream of the batter damaging your beautiful drawing.
Pour some batter into a piping bag, pipe around the drawing patterns to make sure the gaps between the images are covered in cake batter; and then spoon the rest of the batter gradually.

Spoon the batter gradually PLEASE 😇 BE CAREFUL don’t disturb my beautiful friends 😱

5. Release Heat & Prevent Drying
Once it’s baked, cover the cake with parchment paper as soon as it’s out from the oven
invert onto a cooling rack and immediately peel off the paper from pattern to release heat (you don’t want to keep the moisture inside and the cake will get soggy); and then cover our lovely Sumikko with a new piece of parchment paper so it doesn’t dry out.

So pretty!!! 😳🥲

6. Assemble the Cake First
Because Gelatin in the mousse can thicken, it’s really important to assemble the cake first before you start making the Strawberry Mousse.

Don’t peel off the bottom parchment paper, it will be very helpful when you lift the cake into the pan.

Fit both strips of cake around side of the pan.
You might need to trim the second strip a bit to fit perfectly; And then cut the remaining cake to fit the bottom of the pan.

7. Let the Mousse Harden
I know you can’t wait to meet your cutie Sumikko, but you will need to let them chill in the fridge for at least 5 hours or preferably overnight until the mousse is firm.
So… be patient 🙃

Is that a cake? 😧

Actually without any decoration our cake is cute already 😜

I always like to add some sweet touch to the cake…

And don’t forget my lovely Ebifurai No Shippo on top 🤗 so cute!

My favourite Sweet Sugar Cube (left hand side) 😚 SATOU TENCHO is always excited in baking 🤗

This cake is so adorable…
Will you make it for someone you love?

This cake is so light and moist with a jiggly cloud-like strawberry mousse filling inside…
Your kids will fall in love with it … 😄

Feel free to do as many different pictures and colour variations as you would like to…

And if you do please tag share it with me… I would be happy and love to see your beautiful creations 🙂

So.. hungry.. 🙄😓

For the Sumikko lovers, I hope you all enjoyed 😆
Take care Guys AND happy baking !!!
LOVE YOU ALL…

In a clean bowl beat the Egg Whites until soft peaks form. 115 g Egg Whites
Make sure that your bowl is grease free, otherwise you won’t be able to beat the whites properly (wipe the bowl and beater with some vinegar to remove any left-over fat or grease).
Add Caster Sugar in 3 batches and continue beat until it reach a stiff peak form. 35 g Caster Sugar
  5. Add the meringue to the flour batter in 3 batches; Mix gently after each addition until the batter is smooth.
  6. Pour 1/3 of the batter into a piping bag.
Pipe around the drawing patterns to make sure the gaps between the images are covered in cake batter

    Turn it over, change the bottom paper again one more time so it doesn’t get soggy;

Assembly the Cake into the Pan
Because Gelatin in the mousse can thicken, it’s really important to assemble the cake first before you start making the Strawberry Mousse.

  1. Place a piece of parchment paper at the bottom of the pan (5-Inch Round Pan) so it will be easier when you unmould it.
  2. Trim the sides of the cake to make it prettier;

  3. And finally, pour in the Whipping Cream and mix until well combined. 30 g Whipping Cream

Finishing
Once the mousse is set, carefully remove it from the pan. Pipe some fluffy buttercream on top,
add a few strawberries slices; And don’t forget our lovely Ebifurai No Shippo on top.
And it’s done!

NOTES

  1. The great thing about Drawing Paste is that you can also color it a few times.
    For example, if I need white and pink color, I will make white color first;
After I’m done with the white pattern, then I will add a little bit of red food coloring to that white paste and I get a pink color.
  2. To Store; In the fridge (in an airtight container) for 3-4 days.

Sumikko Gurashi Mochi Browniesicle

Hey Guys, today we are making these “Sumikko Gurashi Mochi Browniesicle”. Adorable chocolatey fudgy chewy brownie on a stick.

They are the perfect blend of “Japanese Butter Rice Cake” with “Classic Brownies”, crispy on the outside and ooey-gooey mochi-licious on the inside.
They look just like traditional brownie but a lot less sweet than normal brownies.

Are they so Kawaii?

It’s important to use glutinous rice flour (or Mochiko — sweet glutinous rice flour) for these brownies. It does not contain gluten and gives us the chewy, sticky mochi texture that we want.

These brownies come together quickly, paired with melted and modelling chocolate, pack a serious chocolate punch!

The exterior is similar to Brownie, but the interior is chewy like Mochi

Look! It has a crackly shiny crust, crispy edges and also a rich chocolate flavour and a chewy texture. It is the perfect blend of brownie and mochi.

And when still hot, they are more sticky and difficult to cut, so make sure the brownies cool completely before cutting.

Then simply insert regular popsicle stick into the base of the brownie, cover them with melted dark chocolate and then decorate each character with modelling chocolate.
I love modelling chocolate so much as they are really flexible mouldable delicious clay and there’s no special food colouring require to color the chocolate.

It’s not necessary to use expensive Couverture Chocolate, I found a good dark and white compound chocolate (or candy melts) works best for texture and still tastes pretty good.

I will create my favorite 9 characters: 5 larger pieces for the main characters “Sumikko”, 3 smaller side characters “Minikko” and 1 piece for lovely Mount Fuji “Yama”.
It can be any design or character you want… The sky is the limit!

And can you imagine, what do you get when Mochi and Chocolate Brownies get together???
I’m sure after you tasted it, you may never want to go back to eating plain fudge brownie ever again!

Which one is your favourite character?

They are a perfect gift, dessert or snack for when you get the nighttime munchies, and make sure you pour yourself a really nice glass of cold milk or hot coffee. Because you can’t have brownies without milk or coffee, just like cookies.

Very Chocolatey Ooey-Gooey Mochi-licious on the inside

I hope that you give this recipe a try , it’s really fun, so tasty and I’m sure you are gonna love them.
For all the chocolate lovers out there, enjoy the recipe and happy baking!
Love You All!!

SUMIKKO GURASHI MOCHI BROWNIESICLE
Yield: 9 pieces (8-inch Square Pan)
Active time: 3 hours
Total time: 4 hours

INGREDIENTS
White Modelling Chocolate:

  • 300 gr White Chocolate Compound or White Candy Melts
  • 70 gr Corn Syrup
  • Food Colouring

Mochi Brownies:

  • 35 gr Unsalted Butter
  • 190 gr Milk
  • 35 gr Vegetable Oil
  • 125 gr Brown Sugar
  • 1/2 teaspoon Vanilla Extract
  • 30 gr Eggs
  • 150 gr Glutinous Rice Flour
  • 20 gr Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/8 teaspoon Salt

INSTRUCTIONS
Modeling Chocolate

  1. Melt the chocolate in the microwave or a double boiler (let it cool to the touch). Add the corn syrup, stir just until it turns into a thick, smooth paste.
  2. Pick up the dough as soon as you can easily handle it and knead it over the bowl (knead out as much oil as possible).
  3. Pat the surface of the dough with some paper towel to sop up the oil (pat the dough quickly because the dough is quite sticky at this stage, if the paper sits too long it will get stuck in it).
  4. Once patted dry, wrap it tightly in plastic. Store in an airtight container.
Allow the dough to sit 8-10 hours at room temperature or at least 1 hour in the fridge to set faster.

Mochi Brownies

  1. Preheat the oven to 180° C, grease and line pan with parchment paper.
  2. Place the unsalted butter and milk in small pan, cook over medium low heat until the butter melted. Take it off from the heat and pour it into a bowl.
Add in the oil, sugar and vanilla extract, mix until all the sugar dissolved and well combine.
Allow to cool slightly before you add the egg yolks (we don’t want it turned into scramble eggs).
  3. In another bowl combine all the dry ingredients, mix well.
Pour in milk mixture onto the dry ingredients, do not over mix, whisk until just combined and no lumps remain.
  4. Pour the batter into the prepared pan (the batter will be on the thinner side).
Tap few times to remove air bubbles and then bake for about 20-25 minutes or until toothpick inserted to the center comes out clean.
  5. Take it off from the heat, remove it from the pan, peel the parchment paper and let them cool completely on a cooling rack.

Decorate

  1. Cut mochi brownie according to the template.
  2. Insert regular popsicle stick into the base of the brownie until it’s about almost to the top.
  3. Dip them into a melted dark chocolate, tap a bit to get off any excess, stand these brownies up in a block of Styrofoam until the chocolate is completely hardened.
  4. Colour modelling chocolate as needed and start decorate the browniesicle (kindly follow video instructions)

NOTES

  1. When still hot mochi brownies are more sticky and difficult to cut, so make sure it cool completely before cutting.
  2. Remember when making or working with modelling chocolate are to never overheat and never overwork the mixture when it’s warm. On extremely hot days have a shelf in the freezer set aside so you can pop the piece/pieces you are working on in the freezer for a few minutes to firm up before you continue to work on it.
  3. There is no special food colouring required to colour Modeling Chocolate.
Modeling Chocolate already has liquid in it (corn syrup) so adding more won’t hurt. I like to use regular gel food colours like Americolor.
  4. Mochi browniesicle serve freshly made.
  5. To store; 2 days at room temperature, 3 days in the fridge or freezer for up to 1 month.
  6. Please note; after 2 days in the fridge or 1 day in the freezer, they will lose the chewiness and the texture will becomes like normal brownie.

Sumikko Gurashi Meringue Cookies

Hellooo friends and welcome back!! Today we are making some adorable “Sumikko Gurashi Meringue Cookies” perfect for anyone who’s a fan of this Japan cute animal characters 🙂

The main Sumikko characters are Shirokuma – a polar bear who dislikes the cold; Penguin – who is unsure of being a penguin; Tonkatsu – a piece of leftover pork cutlet; Neko – a timid and anxious cat; and Tokage – a dinosaur who pretends to be a lizard.

Anyway, we are gonna make 4 of them today ; Shirokuma, Penguin, Neko and Tokage.

These cookies are almost too pretty to eat. If you’ve never had one, meringues are light, airy cookies with crisp and chewy interiors. They are not only so adorable, but can floating in your coffee too 😛 .

I’m sharing a classic vanilla meringue recipe today (with notes on how to add your own different flavors!), and the taste always reminds me of marshmallow 😍.

The technique takes a little bit of practice, and a long time in the oven, but I’ll walk you through the steps in the recipe so that you can make your own perfect meringues! Enjoy!!!

SUMIKKO GURASHI MERINGUE COOKIES
Yield: 16 pieces
Active time: 1 hours
Total time: 3 hours

INGREDIENTS

  • 130 grams Egg whites
  • 260 grams Icing sugar
  • 1 teaspoon vanilla extract
  • Food colouring pink, blue, green, yellow, brown, black
  • Vodka (for painting the final details)

INSTRUCTIONS

  1. In a large bowl, place the egg whites and the icing sugar. Mix until well combined.
  2. Once that is all combined, place the bowl over boiling water on the stove. Whisk vigorously until sugar dissolved and there are no more sugar granules visible. Remove from heat.
  3. Using hand or stand mixer, beat on medium high until egg whites become bright white but still runny.
  4. Add in vanilla extract, Then beat on medium high to stiff peaks. This process will take for about 8-10 minutes.
*You may substitute it with any extracts. If I’m adding a different flavor, I usually still keep the vanilla but cut it down to 1/2 teaspoon, then add 1/4-1/2 teaspoon of the other extract.
Be careful as some extracts (like Peppermint) are very strong, make sure that you don’t add in too much!
  5. Separate the batter in a few small bowl, Add in food coloring to the color for each character.

These information is for your guidance of what colour you will need for all the characters and details.

    FOR BODY (big round tip):
White (Shirokuma head), Soft blue (Tokage head), Soft Yellow (Neko head), Soft Green (Penguin head).

    FOR DETAILS (small round tip):
White (ears, hands for Shirokuma and nose for Neko), Soft blue (hands and fins for Tokage), Soft yellow (ears and hands for Neko), Soft green (hands for Penguin), Soft pink (ears for Shirokuma, Brown (nose for Shirokuma), Yellow (mouth for Penguin) .
  6. Load the meringue batter into a pastry bag fitted with a round tip and a ziplock bag works too.
  7. Line the baking tray with a parchment paper.
  8. Then to pipe the meringue, start out by creating a round shape for each character (4 pieces for each character). And then adding other details.
  9. Bake these off in the preheated 180° F (80° C) oven for about 2 hours.
  10. Once the meringue have come out from the oven, let it cool completely on the cooling rack.
  11. Create the final details. I used Americolor food gel colouring mixed with vodka (rhum or lemon or vanilla extract will works too), or you can use food decorating pen or edible pen.
    * The purpose of adding vodka in the food colouring actually is to thinning and lighten the colour. I am using alcohol like vodka because it evaporates and dry quickly.

NOTES:

  1. This recipe is so easy to remember. If you want to double or triple the recipe, just remember that the amount of the icing sugar is always twice as the egg whites.
  2. Make sure that the bowl and beater that you are using to beat your meringue is completely grease and moisture free. Any moisture can ruin your meringues.
  3. Crack your eggs in a separate bowl when separating the whites. Even a tiny bit of yolk can also ruin your meringues, so crack each egg in a small bowl before adding it to the bowl that you will be mixing the meringue batter in.
  4. Do not whisk the meringue on high speed with an electric mixer. This will form an airy foam with lots of large air bubbles. When baked, these large masses of air have a greater ability to expand than smaller air bubbles, causing the mixture to rise, spread and crack unevenly.
  5. Don’t stop until you get stiff peaks.  The batter will take several minutes, at least, of beating to achieve stiff peaks, but keep going.  It will increase in volume and be very thick and glossy — that’s what you’re looking for!
  6. Don’t over-beat your batter, either! Once you hit stiff peaks, stop!  You can stir in your extract and any food coloring at this point, but don’t push it because over-beating the batter is just as bad as not beating it enough.
  7. Do not bake it at too high temperature. The intense heat will cause the air bubbles to expand more efficiently, causing the mixture to rise, spread and crack.
  8. You can store the meringues at room temperature in an airtight container for up to 3 weeks. Line parchment paper between each layer of meringues.
